Utilizing Leftovers

So, I have been very lazy this week and ended up with some scraps that I hate to throw out.  I used what I had to create a quick Thursday night appetizer/dinner.
Nachos
4 homemade tortilla chips (we cut up flour tortillas and deep fry them then toss with salt)
1 Slice cabot Sharp Cheddar
2 tablespoons salsa
2 ounces of avocado 
1tbs sour cream

Tortilla-less Chicken Quesadilla
Ingredients:
2 bell and evans chicken tenders
1/4 cup refried pinto beans
1 ounce cabot cheddar
2 ounces avocado, sliced
1 tbs sour cream divided in two

Cook bell and evans chicken according to directions.  In last 5 minutes, top with refried beans, avocado and cheddar.  Once done cooking, top with sour cream!

Calorie Content: 475 w/out french fries
